Homemade Chia Seed Pudding


This recipe is kind of random for me. One day I was just like, "I want to make chia seed pudding," probably because I had bought a bag of chia seeds a few days earlier. So I looked up a bunch of recipes to find a good milk to chia seed ratio. One recipe I found called for 6 tablespoons of chia seeds and stated that the entire recipe was something like 160 calories. I was just like...GIRL. Six tablespoons of chia seeds is over 200 calories, no matter which brand you use :p I don't know where she got her numbers from. Trust no one! Except me ;) Anyways I also wanted to make this recipe as "plain" as possible since a lot of the recipes I saw were pretty extra. Peanut butter and jelly chia seed pudding. Triple chocolate chia seed pudding. Carrot cake chia seed pudding. That's all well and good, but I wanted something simple. I'm not really into super sweet tasting foods. Plus, this way you can add your own toppings and mixings into your pudding! :)

Ingredients and calories:

5 tsp of chia seeds (100)

1 cup of unsweetened almond milk (30)

1/2 tsp of vanilla extract (6)

1/2 tsp of cinnamon (0)

1/2 tsp of ground clove (0)

1/2 tsp of cardamom (0)

5 tsp of zero calorie sweetener, I use sucralose (0)

Total calories (Makes one serving): 136

Place all the ingredients into a container that can be sealed tight. Close the top and shake until thoroughly mixed. Put into the fridge overnight and enjoy the next day.
