A Hearty Homemade Soup

No extra oils. No extra salt. One delicious rice and vegetable soup.

Ingredients and calories:

1/4 cup of white rice (~50)

1/2 cup of water (0)

1.5 cups of chopped cauliflower (~40)

1 small zucchini or half of a medium zucchini (~20)

4 baby carrots (~14)

1/2 cup of sliced red onion (~30)

3 baby bella mushrooms (~10)

8 sprays of olive oil (~16)

1 cube of Edward and Sons Not-Chick'n Bouillon (30)

2 cups of water (0)

Total calories: ~210

Makes one serving.

Chop the cauliflower into small pieces, slice the zucchini, and chop the carrots. Steam for 8-10 minutes, until soft. Meanwhile, cook the rice in a medium to large pot – 1/2 cup of water for 1/4 cup of rice. Spray a small pan with olive oil and add in the chopped onions and sliced mushrooms. Cook until the onions and mushrooms brown. Add two cups of hot water to the bouillon cube and stir thoroughly. Once the rice is finished cooking, add in the cauliflower, zucchini, carrots, onions, mushrooms, and bouillon to the pot and simmer for 5 minutes. Season with dried parsley and basil, if inclined.
