Coconut Mug Cake

I used my own photo again! Here's a mini coconut flour mug cake to satisfy those cravings.

Ingredients and calories:

4 tsp of coconut flour (40)

1 tsp of oat bran (9)

5 tsp of unsweetened applesauce (10)

1/2 tsp of baking powder (1)

2 tsp of zero calorie sweetener (0)

Total calories: 60

Makes one serving.

Add all of the ingredients into a medium to large mug, dry ingredients first, and stir until the coconut flour and oat bran are thoroughly mixed with the applesauce. Microwave for 1 minute and 45 seconds and let cool for about five minutes. Sometimes using coconut flour can leave a recipe dry, but here the applesauce helps keep this mug cake flavorful and moist.
