Healthy Sweet Potato Salad

I've recently come to love sweet potatoes again and I had a sweet potato salad at the Native Foods Cafe in Encinitas that was very very good, so I decided to make my own.

Ingredients and calories:

1 medium sweet potato (~112)

Coconut oil cooking spray (~10)

1.5 cups of baby spinach and arugula mix (20)

8 grape tomatoes (~8)

6 slices of cucumber (~5)

1/2 red bell pepper (~18)

As much apple cider vinegar as you want (0)

Total calories (makes one serving): ~165

Preheat the oven to 400 degrees F. Thoroughly wash the sweet potato, dry, and then poke some holes in it with a fork. Spray with coconut oil and wrap in foil. Bake for 50 minutes and then let it cool for a few minutes. Slice the cucumber and bell pepper (I usually cut the bell pepper into cube-like pieces). Mix together the spinach and arugula, tomatoes, cucumber, and bell pepper. Cut the sweet potato into cubes or semi-circles and add to the salad. Top with apple cider vinegar. Enjoy!
