Buckwheat Pancakes

I absolutely love buckwheat. It's got a particular taste that I just find wonderful. And it's naturally gluten free!
Ingredients and calories:
1 cup of buckwheat flour (440)
1 cup of unsweetened vanilla almond milk (30)
1 tsp of baking powder (4)
1/4 tsp of salt (0)
1/2 cup of monk fruit or Swerve (for other sweeteners, use a conversion table) (0)
1 tsp of vanilla extract (12)
Total calories: 486
Calories per serving (out of 10-12 servings): ~50
Mix all the ingredients together in a large bowl. For each pancake, spray a small skillet with cooking spray (let's say that's about 10 calories). Pour in a ladel-ful and flip once the bottom is brown. Serve with fruits or maple syrup if you're feeling adventurous. You can also try to make banana walnut pancakes or orange cranberry pancakes, as these are so low calorie.
